Mexican Pizza

Mexican Pizzas

This is a copycat recipe of the Mexican Pizza served at Taco Bell in the USA (removed from their menu, and then reinstated by popular demand).

Ingredients:

Method

  1. Gently fry the ground beef and taco seasoning until cooked, breaking up any lumps as it cooks, then set aside,
  2. Heat a little oil (use just enough oil to grease the bottom of the pan) in frying pan over medium/high heat. Fry each tortilla until lightly browned and crisped,
  3. Preheat the oven to 375°F (190°C),
  4. Place a tortilla on greased rimmed baking sheet,
  5. Top the tortilla with refried beans and spread,
  6. Layer the meat and salsa onto the tortilla,
  7. Top with a second tortilla,
  8. Coat the tortilla with enchilada sauce, then top with shredded cheese, olives, tomatoes and a little more cheese,
  9. Repeat steps 4 to 8, to make the second Mexican Pizza,
  10. Bake the pizzas for 5 to 7 minutes to heat and melt the cheese,
  11. Serve topped with shredded lettuce, sliced green onions and sour cream.
