Calve's Liver with Pasta Recipe

This is real Italian style liver.

The liver should still be pink inside. If you are squeamish about your liver, this recipe is not for you.

  1. Thinly slice a leak, and put in a frying pan with 2 tablespoons of olive oil. Add a quarter of a level teaspoon of dried marjoram, and 1 clove of crushed & thinly sliced garlic.
  2. Begin to fry the contents of the pan on a medium heat, stirring regularly.
  3. When the leaks start to look cooked, add about 6 ounces of very thinly sliced calves liver.
  4. Optionally, add 2 medium sized sliced mushrooms.
  5. Stir continuously, making sure that the pieces of liver all get turned over and cooked on both sides.
  6. As soon as the liver is lightly browned all over (but still pink inside), add about 1 glass of dry vermouth or white wine.
  7. Turn off the heat. Stir vigorously for about 1 minute, as the vermouth/wine reduces a little.
  8. Serve with pasta.
